  • 4 tbsp unsalted butter (melted)
  • 8 oz raspberries
  • 3/4 cup white granulated sugar
  • 1 tbsp lemon juice
  • 32 oz cream cheese (softened)
  • 1 cup white granulated sugar
  • 3 eggs (room temperature)
  • 1/2 cup heavy whipping cream
  • 2 tsp vanilla extract

Instructions

  1. Preheat your oven to 325°F and grease a 9-inch springform pan.
  2. For the crust, mix crushed Oreo cookies with melted butter and press into the bottom of the pan.
  3. Prepare the raspberry layer by cooking raspberries with sugar, lemon juice, and vanilla until thickened. Pour over the crust.
  4. For the cheesecake filling, beat cream cheese with sugar, add eggs one at a time, then mix in whipping cream and vanilla until smooth.
  5. Pour half of the filling over the raspberry layer, then add remaining filling on top.
