  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 16 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 cup mango puree (about 2 ripe mangoes)
  • ¾ cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup fresh mango slices (about 1 medium mango)
  • 2 tablespoons shredded coconut (optional)

Instructions

  1. Prepare the crust by mixing graham cracker crumbs, melted butter, and sugar in a bowl. Press firmly into the bottom of a springform pan.
  2. Make the filling by beating together softened cream cheese, sour cream, and sugar until smooth. Then add mango puree, vanilla extract, and lemon juice; mix until combined.
  3. Pour the filling over the crust and smooth the top with a spatula. Refrigerate for at least 4 hours or until set.
  4. Before serving, top with fresh mango slices and sprinkle with shredded coconut if desired.
