  • 1 cup unsalted butter (softened)
  • ½ cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ½ teaspoon almond extract
  • 2 ¼ cups all-purpose flour
  • 3 tablespoons granulated sugar (for rolling)
  • ½ cup raspberry and/or apricot jam (or your choice)

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg yolk, vanilla extract, salt, and almond extract until combined.
  4. Gradually mix in the flour until a firm dough forms.
  5. Roll tablespoon-sized portions into balls; then roll in sugar before placing on sheets spaced apart.
  6. Use a round spoon to make small wells in each ball for jam filling.
  7. Fill each well with approximately ½ teaspoon of jam.
  8. Bake for about 10–11 minutes or until lightly golden on the bottom; cool before serving.
