  • 1 cup heavy whipping cream
  • 3 tbsp white granulated sugar
  • 1/2 cup white granulated sugar
  • 6 egg yolks
  • 2 tbsp almond extract
  • 10 oz Ladyfingers cookies
  • 1 1/2 cups cold espresso (instant espresso powder recommended)
  • 2 tbsp cocoa powder (for dusting)

Instructions

  1. Brew the cold espresso using instant espresso powder and let it cool completely.
  2. In one bowl, mix together the mascarpone with 3 tablespoons of sugar. In another bowl, whip the heavy cream until stiff peaks form.
  3. Gently fold the whipped cream into the mascarpone mixture.
  4. Whisk together the egg yolks and remaining sugar until pale and creamy; combine this with the mascarpone mixture along with almond extract.
  5. Dip each Ladyfinger in the cooled espresso briefly and layer half in an 8×8 inch dish. Spread half of the mascarpone mixture over it, then repeat layers.
  6. Cover with plastic wrap and refrigerate for at least four hours or overnight before serving. Dust with cocoa powder before enjoying.
