  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp pumpkin pie spice
  • 1 can (15 oz) pure pumpkin puree
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 1/4 cups plus 1 Tbsp sugar, divided
  • 1 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line two muffin pans.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice; set aside.
  3. In an electric mixer bowl, combine pumpkin puree, vegetable oil, eggs, and 1 1/4 cups sugar; mix until smooth.
  4. Gradually add the dry ingredients to the wet mixture; mix until just combined.
  5. Prepare cinnamon sugar by mixing remaining sugar with cinnamon in a small bowl.
  6. Fill muffin cups about two-thirds full with batter and sprinkle generously with cinnamon sugar.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Cool in the pan for five minutes before transferring to a wire rack.
