  • ¾ cup Italian breadcrumbs
  • 2 pounds lean ground beef
  • 1 tablespoon ketchup
  • 1 teaspoon Italian seasoning
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ cup chili sauce
  • ½ cup ketchup
  • 2 tablespoons brown sugar (optional)

Instructions

  1. Preheat your oven to 350°F and line a rimmed baking pan with aluminum foil, spraying it with cooking spray.
  2. Sauté diced onions in butter over medium-low heat until tender. Let cool.
  3. In a mixing bowl, combine eggs, milk, and breadcrumbs; let sit for about 5–10 minutes.
  4. Add ground beef, cooled onions, ketchup, Italian seasoning, parsley, salt, and pepper to the mixture; mix gently until combined.
  5. Shape into an 8"x4" loaf on the prepared pan and bake for about 40 minutes.
  6. Meanwhile, mix chili sauce and ketchup in a bowl; add brown sugar if desired. Spread over the meatloaf after initial baking.
  7. Return to the oven for an additional 15–30 minutes until reaching an internal temperature of 160°F. Broil for extra crispiness if desired.
