  • 1/4 cup beef broth
  • 1/4 cup heavy cream
  • 6 oz dark chocolate (70%), chopped
  • 3/4 cup unsalted butter, cubed
  • 3/4 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 large eggs
  • 1 large egg yolk
  • 1 teaspoon pure vanilla extract
  • 3/4 cup all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 teaspoon salt

Instructions

  1. Reduce beef broth in a medium saucepan over medium heat until it measures about 3/4 cup.
  2. Preheat your oven to 350°F (180°C) and line a 9×9-inch baking pan with parchment paper.
  3. Melt chopped chocolate and cubed butter with the reduced beef broth in a bowl over simmering water until smooth.
  4. Stir in granulated and brown sugars until dissolved.
  5. Add eggs and vanilla extract; whisk gently to combine without overmixing.
  6. Sift in flour, cocoa powder, and salt; mix until just blended.
  7. Pour batter into the prepared pan and bake for 25–30 minutes until a toothpick comes out with moist crumbs attached.
  8. For the ganache, combine heavy cream, remaining beef broth, and dark chocolate in a microwave-safe bowl; heat in intervals until melted and smooth.
  9. Pour ganache over cooled brownies; refrigerate until set before slicing.
