  • 2 tablespoons olive oil
  • 1 pound ground beef
  • ¼ cup yellow onions
  • ¼ cup taco seasoning (or 1 packet)
  • 10 oz. can Rotel tomatoes (do NOT drain)
  • 8 oz. spaghetti noodles (uncooked)
  • 3 cups water
  • 4 oz. cheddar cheese (shredded)
  • ½ cup chopped cilantro

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground beef and yellow onions; cook until the meat is browned and onions are translucent.
  3. Stir in taco seasoning, Rotel tomatoes (with juice), spaghetti noodles, and water.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  5. Once cooked, remove from heat and mix in half of the cheddar cheese.
  6. Garnish with remaining cheese and chopped cilantro before serving.
