Perfect for busy weeknights and meal prepping, this dish features seasoned ground beef, hearty beans, and gooey cheese nestled between warm flour tortillas.

  • 1.52 lbs ground beef
  • 12 taco-sized flour tortillas (or 9 burrito-sized)
  • 116 oz can beans (pinto, black beans, or refried)
  • 11 oz packet taco seasoning
  • 3.5 cups shredded cheese (Mexican blend, cheddar, pepper jack)

Instructions

  1. Preheat your oven to 375°F.
  2. In a large skillet over medium heat, brown the ground beef until fully cooked; stir in taco seasoning.
  3. Spray a 9×13 casserole dish with non-stick spray and layer the bottom with flour tortillas.
  4. Add half of the cooked ground beef followed by half of the beans and one-third of the shredded cheese.
  5. Repeat layering with another set of tortillas, remaining beef, beans, and another third of cheese.
  6. Top off with one final layer of tortillas and sprinkle remaining cheese on top.
  7. Bake for approximately 25 minutes or until cheese is melted and bubbly.
