  • 1 pound lean ground beef
  • ½ yellow onion (diced)
  • 1 teaspoon minced garlic
  • 1 packet taco seasoning
  • 12 ounces frozen corn
  • 14.5 ounces petite diced tomatoes with green chilies (not drained)
  • 1 cup sour cream
  • 3 cups Mexican blend cheese
  • 2 cups finely crushed Doritos

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Spray a 9×13 inch casserole dish with nonstick cooking spray.
  3. In a large skillet over medium heat, cook ground beef and diced onions until browned. Drain excess grease.
  4. Stir in minced garlic and cook for one minute until fragrant.
  5. Add frozen corn, taco seasoning, diced tomatoes with green chilies, and two cups of finely crushed Doritos; mix well.
  6. Remove from heat and fold in sour cream and two cups of shredded Mexican cheese until combined.
  7. Pour mixture into the prepared casserole dish and bake for about five minutes.
  8. Sprinkle remaining cheese and one cup of loosely crushed Doritos on top; return to the oven for another five minutes until cheese is melted.
  9. Let cool slightly before serving.
