  • 1/4 cup water
  • 1 tablespoon taco seasoning
  • 1/4 cup chopped onion
  • 8 flour tortillas (burrito size)
  • 1 cup nacho cheese sauce
  • 2 cups shredded Mexican cheese blend
  • 1/2 cup sour cream
  • 1 1/2 cups uncooked white rice
  • 2 cups chicken broth
  • 1 cup chunky salsa

Instructions

  1. In a skillet over medium heat, add olive oil and sauté the chopped onion until translucent. Add the ground beef, breaking it apart as it cooks.
  2. Drain excess fat if necessary. Stir in taco seasoning and water; simmer for about 5 minutes.
  3. In a pot, bring chicken broth to a boil. Add uncooked rice; reduce heat, cover, and simmer for 15-20 minutes until tender.
  4. In a mixing bowl, combine cooked rice with salsa and seasonings; mix well.
  5. Lay tortillas flat; spread sour cream in the center of each one. Add beef mixture, rice mixture, nacho cheese sauce, and shredded cheese.
  6. Fold sides of each tortilla over the filling and roll tightly into burrito shapes. Heat in a skillet until golden brown on both sides.
