  • 2 pounds boneless skinless chicken breast (cut into 1-inch pieces)
  • ¾ cup 100% pineapple juice
  • ½ cup brown sugar
  • ¼ cup soy sauce
  • 3 tablespoons hoisin sauce
  • 1 teaspoon minced garlic
  • 2 tablespoons cornstarch
  • Green onions (for garnish)

Instructions

  1. Place the chicken pieces into a 4 to 4½ quart crockpot.
  2. In a small mixing bowl, whisk together pineapple juice, brown sugar, soy sauce, hoisin sauce, and minced garlic until smooth.
  3. Reserve ¼ cup of the sauce and pour the remaining over the chicken. Stir gently to coat.
  4. Cover and cook on LOW for 4 hours.
  5. Mix cornstarch with reserved sauce until smooth and pour into the crockpot. Stir well.
  6. Cook on HIGH uncovered for an additional 30-45 minutes until the sauce thickens.
  7. Garnish with sliced green onions before serving.
