  • 4 large tomatoes (Beefsteak or Roma)
  • 2 tablespoons butter
  • 1 large red onion (diced)
  • 2/3 cup oyster mushrooms (thinly sliced)
  • 2 ounces rice (uncooked)
  • 3/4 cup vegetable broth
  • 2 teaspoons Italian seasoning
  • 3 tablespoons parmesan cheese

Instructions

  1. Preheat your oven to 200C/400F.
  2. Cut off the tops of the tomatoes and scoop out the insides, reserving them for later.
  3. In a skillet over medium-high heat, melt butter and sauté onions until translucent. Add mushrooms and cook until softened.
  4. Stir in rice, allowing it to glisten before adding vegetable broth. Cook until liquid is absorbed.
  5. Mix in Italian seasoning and reserved tomato flesh; stir in parmesan cheese.
  6. Stuff the filling into the hollowed tomatoes and place them in a baking dish.
  7. Bake for about 20 minutes until golden on top.
