Ingredients

Scale
  • 4 salmon fillets (skinless)
  • 3 cups baby spinach
  • 4 ounces cream cheese (softened)
  • 1/4 cup parmesan cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your non-stick skillet over medium heat. Pat dry the salmon fillets and drizzle with olive oil, seasoning both sides with salt and pepper.
  2. Carefully cut slits lengthways into each fillet to create pockets for stuffing.
  3. In a small saucepan, sauté the spinach until wilted, then mix it with cream cheese and parmesan in a bowl.
  4. Stuff the spinach mixture into the slits of each salmon fillet, securing the ends with toothpicks if necessary.
  5. Sear the stuffed fillets in the skillet for about six minutes on each side or until they reach an internal temperature of 145°F. Finish with a drizzle of lemon juice before serving.
