  • 1½ cups graham cracker crumbs
  • ¼ cup sugar
  • 6 tablespoons melted butter
  • 8 ounces softened cream cheese
  • ¾ teaspoon vanilla extract
  • ½ cup powdered sugar
  • 1 cup whipping cream
  • 2 tablespoons cornstarch
  • ¼ cup sugar (for glaze)
  • 2 tablespoons strawberry gelatin
  • ½ cup water
  • 1 tablespoon lemon juice
  • 3 cups hulled strawberries

Instructions

  1. Preheat oven to 350°F. Mix graham cracker crumbs, sugar, and melted butter until combined. Press into a greased 9-inch pie pan and bake for 8-9 minutes. Cool for 30 minutes.
  2. Beat softened cream cheese with an electric mixer until smooth. Add vanilla extract and powdered sugar; mix well. In another bowl, whip cream to soft peaks and fold into the cream cheese mixture. Spread into the cooled crust and chill for 1-2 hours.
  3. For the topping, whisk cornstarch, sugar, strawberry gelatin, water, and lemon juice in a saucepan over low heat until thickened (about 5 minutes). Remove from heat and cool slightly before adding strawberries. Pour over pie before serving.
