  • 2 pounds beef (thinly sliced)
  • 1 packet taco seasoning
  • 3 tablespoons water
  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1 small sweet onion (sliced)
  • 1 tablespoon minced garlic
  • 1 cup shredded Colby Jack cheese
  • 6 large flour tortillas

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Sauté sliced bell peppers and onion until softened, then add minced garlic and cook until fragrant.
  2. In the same skillet, add remaining olive oil and thinly sliced beef; cook until desired doneness. Stir in taco seasoning and water, mixing well before adding sautéed veggies.
  3. Fill each tortilla with beef mixture and cheese, fold in half, and toast on both sides until golden brown and cheese melts.
  4. Slice into wedges and serve with salsa, guacamole, sour cream, cilantro, and lime wedges.
