  • 1 Ribeye Steak (285g / 10oz)
  • 1 tbsp Vegetable Oil
  • 1 heaped tbsp Unsalted Butter
  • 200g Tagliatelle (or other long-cut pasta)
  • 2 small Shallots (finely diced)
  • 120ml Chicken Stock
  • 150g Garlic & Herb Boursin Cheese
  • 20g Freshly Grated Parmesan
  • Fresh Parsley (finely diced)
  • Salt & Black Pepper

Instructions

  1. Pat the steak dry and season both sides generously with salt and pepper.
  2. Heat a large cast-iron or heavy-based pan over high heat. Add oil and allow it to heat for 5-10 seconds.
  3. Sear the steak for about 2 minutes and 30 seconds on each side, basting with butter during the last minute. Remove from pan and lower heat to medium.
  4. Cook tagliatelle in salted boiling water until al dente, then do not drain.
  5. Sauté shallots in the same pan until soft, then add chicken stock and melt in Boursin cheese.
  6. Stir in Parmesan and parsley; combine with resting juices from steak, then simmer gently.
  7. Transfer cooked pasta into sauce using tongs, tossing until well coated. Adjust consistency with reserved pasta water if needed.
  8. Slice rested steak against the grain and serve atop pasta, garnished with extra Parmesan and parsley.
