  • 500g sea scallops
  • 1 tablespoon olive oil
  • 1 can (400ml) coconut milk
  • 2 tablespoons red curry paste
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 cup cooked jasmine rice or quinoa
  • Fresh cilantro leaves for garnish
  • Optional: 1 red bell pepper, sliced
  • Optional: 1 cup snap peas

Instructions

  1. Pat dry the scallops and season lightly with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear scallops for 2-3 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, sauté garlic for about 30 seconds, then stir in red curry paste and coconut milk. Mix well.
  4. If using, add sliced bell pepper and snap peas, simmering for 3-5 minutes until tender-crisp.
  5. Return scallops to the skillet, cooking gently for an additional 2 minutes to absorb flavors.
  6. Serve over jasmine rice or quinoa and garnish with cilantro.
