  • 22.5 lbs steak (sirloin, strip, or round)
  • 4 tablespoons avocado oil
  • 1 large white onion
  • 5 garlic cloves
  • 2.5 cups beef stock
  • 1/2 cup dry grape juice
  • 4 tablespoons butter
  • 1/4 cup flour

Instructions

  1. In a bowl, mix beef broth with Worcestershire sauce, crumbled chicken bouillon, garlic powder, mustard powder, thyme, sage, pepper, and Kitchen Bouquet if using.
  2. Tenderize the steak using a meat mallet and season with avocado oil and beef seasoning.
  3. Heat avocado oil in a cast iron skillet over medium-high heat and sear steaks until golden brown on both sides.
  4. Deglaze the pan with grape juice and sauté onions and garlic in butter until softened.
  5. Combine the broth mixture with the sautéed onions and bring to a simmer before adding back the steak.
  6. Cover and simmer on low for 2.5–3 hours until fork-tender.
