  • 2.753 lbs rump roast
  • 1 large yellow onion
  • 8 oz baby portobello mushrooms
  • 1 lb garlic bulb
  • 1 tsp crushed red pepper flakes
  • 1/2 Tbsp dry oregano
  • 1 Tbsp dry thyme
  • 2 Tbsp dry parsley
  • 2 Tbsp dry basil
  • 1/2 Tbsp white granulated sugar
  • 1 tbsp coarse or sea salt
  • 1 tbsp freshly ground black pepper
  • Beef stock (about 4-5 cups)

Instructions

  1. Heat beef stock in a saucepan over medium heat; stir in oregano, thyme, parsley, basil, salt, red pepper flakes, and sugar.
  2. Place the rump roast in the slow cooker; poke holes in it and insert peeled garlic cloves.
  3. Slice the onion and chop the mushrooms; add them to the slow cooker around the beef.
  4. Pour the prepared stock mixture over everything in the slow cooker.
  5. Securely close the lid; cook on low for 8-10 hours until the beef is fork-tender.
  6. Remove beef using tongs; shred with two forks and mix with cooked vegetables.
  7. Reserve cooking juices for serving.
