  • 2 lbs boneless, skinless chicken thighs (cut into 12 inch pieces)
  • 1/3 cup low-sodium soy sauce
  • 2 tablespoons lime juice
  • 1/4 cup orange juice
  • 1 tablespoon lime zest
  • 2 tablespoons sesame oil
  • 1 can (20 oz) pineapple chunks (with juice)
  • 1 red bell pepper (cut into chunks)
  • 1 yellow bell pepper (cut into chunks)
  • 1 tablespoon minced garlic
  • 1 tablespoon grated ginger
  • 1/3 cup brown sugar
  • 1/3 cup hoisin sauce
  • Optional: red pepper flakes

Instructions

  1. Heat sesame oil in a large skillet over high heat. Sear the chicken pieces until browned on all sides.
  2. Transfer the seared chicken to the slow cooker.
  3. Add soy sauce, lime juice, orange juice, lime zest, pineapple chunks (with juice), bell peppers, garlic, ginger, brown sugar, hoisin sauce, and red pepper flakes to the slow cooker.
  4. Cover and cook on LOW for 7 to 8 hours or HIGH for 3 to 4 hours until the chicken is tender.
  5. In the last half hour of cooking, mix cornstarch with orange juice until dissolved and stir it into the slow cooker to thicken the sauce.
  6. Serve warm with rice and steamed vegetables.
