  • 1 pound linguine (spaghetti or angel hair)
  • 2 tablespoons olive oil
  • 1 pound medium shrimp (peeled and deveined)
  • 3 tablespoons butter
  • 4 cloves garlic (minced)
  • ⅓ cup white grape juice
  • Juice of one lemon
  • ½ teaspoon salt
  • ½ teaspoon red pepper flakes
  • 2 tablespoons fresh parsley

Instructions

  1. Cook the linguine according to package instructions in a large pot of salted boiling water until al dente.
  2. Reserve ½ cup pasta water before draining the pasta.
  3. Pat the shrimp dry with paper towels.
  4. In a large skillet, heat olive oil over medium-high heat. Add shrimp and sauté for about 2 minutes on one side; flip and cook for another minute until just pink.
  5. Add butter and minced garlic to the skillet, stirring until fragrant.
  6. Pour in white grape juice, lemon juice, salt, and red pepper flakes; simmer gently.
  7. Toss in the drained pasta, combining well with the shrimp and sauce. Adjust sauce consistency with reserved pasta water as needed.
  8. Garnish with chopped parsley before serving.
