  • 1.5 lbs raw shrimp (cleaned and deveined)
  • 1 lemon
  • 2 celery ribs (diced)
  • 3 tbsp scallions (diced)
  • 1/3 cup mayonnaise
  • 1 tbsp lemon juice
  • 1 tbsp apple cider vinegar
  • 1 tbsp fresh minced parsley
  • 1 tbsp fresh minced dill weed
  • 1/2 tsp paprika
  • 1/81/4 tsp black pepper
  • 1/2 tsp kosher coarse salt (or coarse sea salt)
  • 45 brioche hot dog buns
  • 2 tbsp salted butter (melted)

Instructions

  1. Boil 2 quarts of water in a large pot with bay leaves, dill, salt, and peppercorns. Add shrimp and cook for 3-5 minutes until pink and opaque. Strain under cold water.
  2. In a mixing bowl, combine diced celery, scallions, mayonnaise, lemon juice, apple cider vinegar, parsley, dill weed, paprika, black pepper, and salt. Mix well.
  3. Gently fold in cooled shrimp until evenly coated.
  4. Brush melted butter on brioche buns and lightly toast them.
  5. Generously fill each bun with the creamy shrimp mixture and serve immediately.
