  • 1 pound large shrimp, peeled and deveined
  • 3 cups cooked white rice (preferably day-old)
  • 1 medium yellow onion, diced
  • 1 cup carrots, shredded or julienned
  • ½ cup frozen peas
  • ½ cup frozen corn kernels
  • 2 tablespoons grapeseed oil
  • 4 tablespoons unsalted butter
  • ¼ cup low-sodium soy sauce
  • 2 teaspoons garlic powder

Instructions

  1. Pat the shrimp dry and season with salt and black pepper. Set aside.
  2. Heat grapeseed oil in a large skillet over medium-high heat. Add 2 tablespoons of butter; once melted, add shrimp and cook for about 3 minutes until pink. Remove and set aside.
  3. Deglaze the pan with rice vinegar, scraping up browned bits.
  4. Add remaining butter; sauté onion for 2 minutes then add carrots for another 3 minutes.
  5. Push vegetables aside, add sesame oil, and scramble eggs in the center for about a minute before mixing with veggies.
  6. Stir in rice, season with salt, pepper, and garlic powder; add soy sauce and oyster sauce until golden brown (3–4 minutes).
  7. Mix in frozen peas and corn; stir until heated through.
  8. Return shrimp to mix gently for about a minute. Garnish with chopped green onions before serving.
