  • 4 medium russet potatoes
  • 1 tablespoon olive oil
  • 1 pound raw medium shrimp (peeled and deveined)
  • 2 tablespoons butter (divided)
  • 2 cups heavy cream
  • ½ cup Parmesan cheese (shredded)
  • ½ cup Asiago cheese (shredded)
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon minced garlic
  • Optional: fresh parsley and green onions for garnish

Instructions

  1. Preheat oven to 425°F.
  2. Rub potatoes with olive oil and sprinkle with salt. Bake for 50–60 minutes until fork-tender.
  3. In a frying pan, melt one tablespoon of butter over medium heat. Cook shrimp on both sides until pink, then season with Cajun seasoning.
  4. In the same pan, melt the remaining butter, sauté garlic, then add heavy cream and cheeses until simmering.
  5. Add shrimp to the sauce, mix well, and then cut baked potatoes open lengthwise to create bowls.
  6. Spoon shrimp mixture over each potato and garnish with parsley and green onions.
