  • 4 cups cooked shredded chicken
  • 1 ounce taco seasoning
  • ½ cup water
  • 8 large flour tortillas
  • 15 ounces canned black beans, drained and rinsed
  • 1 cup frozen corn kernels, thawed
  • 4 cups shredded Mexican cheese blend
  • 2 green onions, thinly sliced

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a medium skillet, combine shredded chicken with taco seasoning and water. Simmer until most of the water evaporates.
  3. Brush one side of each tortilla with vegetable oil. Lay six tortillas on a baking sheet, oil side down.
  4. Spread the seasoned chicken mixture over the tortillas; add black beans, corn, green onions, and top with cheese.
  5. Place another tortilla on top to seal in the fillings.
  6. Bake for 18 minutes under another baking sheet; remove the top sheet and bake for an additional 3-5 minutes until golden brown.
  7. Let cool for 5 minutes before slicing.
