  • 1 small onion (sliced)
  • 5 cloves garlic (minced)
  • 3 tablespoons tomato paste
  • 150 ml white grape juice (or fish broth)
  • 2 cups tomato sauce
  • 12 ounces mixed seafood
  • 1/2 pound mussels
  • Seasonings: salt, pepper, parsley

Instructions

  1. Cook the spaghetti according to package instructions until al dente. Reserve some pasta water before draining.
  2. Heat olive oil in a skillet over medium heat. Sauté sliced onion until translucent, then add minced garlic for an additional minute.
  3. Stir in tomato paste and cook for another two minutes.
  4. Pour in white grape juice or fish broth and simmer until the alcohol smell evaporates.
  5. Add tomato sauce, salt, pepper, and half of the parsley; bring to a simmer.
  6. Incorporate mixed seafood and mussels, cooking until mussels open.
  7. Toss cooked spaghetti into the skillet with the seafood mixture; use reserved pasta water if needed for consistency.
  8. Garnish with remaining parsley before serving warm.
