  • 1 cup Arborio rice
  • 4 cups low-sodium chicken broth
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 200g shrimp, peeled and deveined
  • 200g scallops, cleaned
  • 300g beef steak (sirloin or ribeye), diced
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Warm the chicken broth in a saucepan over medium heat.
  2. In a large skillet, heat olive oil and sauté the onion until translucent. Add garlic and cook for another minute.
  3. Stir in Arborio rice for about 2 minutes until slightly toasted.
  4. Gradually add hot chicken broth, one cup at a time, stirring continuously until absorbed (18-20 minutes).
  5. Season steak with salt and pepper; sear in another skillet for about 3-4 minutes. Remove from heat.
  6. Cook shrimp and scallops in the same pan for about 3-5 minutes until opaque.
  7. Combine everything into the risotto along with Parmesan cheese; stir well to mix.
  8. Garnish with fresh parsley before serving.
