  • 1 pound salmon filets (skin and bones removed)
  • 1 tablespoon Dijon mustard
  • 2 teaspoons fresh lemon juice
  • ½ teaspoon Old Bay seasoning
  • ¼ teaspoon garlic powder
  • ½ cup Panko bread crumbs
  • 2 tablespoons chopped fresh parsley
  • ⅛ teaspoon salt (more to taste)
  • ⅛ teaspoon black pepper (more to taste)
  • 2 tablespoons olive oil
  • 4 hamburger buns (or brioche buns)
  • 8 leaves lettuce
  • ½ cup tartar sauce

Instructions

  1. Cut the salmon into small pieces and place one-third in a food processor with mustard, lemon juice, Old Bay seasoning, and garlic powder. Pulse until nearly smooth.
  2. In a medium bowl, combine the blended mixture with the remaining chopped salmon, breadcrumbs, parsley, salt, and pepper. Mix gently.
  3. Shape the mixture into four patties about 4 inches wide and refrigerate for at least 30 minutes.
  4. Heat olive oil in a nonstick skillet over medium heat. Cook patties for 3 to 4 minutes per side until golden brown.
  5. Assemble your burgers by spreading tartar sauce on each bun, layering with lettuce and a cooked patty.
