  • 3/4 cup low fat buttermilk
  • 1/4 cup sour cream
  • 3 eggs (separated)
  • 1 1/4 cups all-purpose flour
  • 23 tbsp white granulated sugar
  • Zest of 1 lemon
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • Pinch of salt

  1. In a bowl, mix egg yolks with ricotta, buttermilk, sour cream, lemon zest, vanilla extract, sugar, baking powder, baking soda, and salt until smooth.
  2. In another bowl, beat egg whites until stiff peaks form.
  3. Gently fold the dry ingredients into the ricotta mixture before carefully adding the beaten egg whites.
  4. Heat a non-stick skillet over medium heat and pour about 1/4 cup of batter for each pancake.
  5. Cook until bubbles form on top; flip and cook until golden brown.
  6. Serve warm with toppings of your choice.
