  • 32 oz cream cheese
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1/4 cup buttermilk
  • 1/2 cup heavy whipping cream
  • 2 tsp vanilla extract
  • 1 tbsp white vinegar
  • 2 tbsp cocoa powder
  • Red food coloring

Instructions

  1. Preheat your oven to 325°F and grease a 9-inch springform pan. Prepare a larger roasting pan for the water bath.
  2. Combine crushed Oreo cookies and melted butter, then press into the bottom of the springform pan.
  3. Beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Incorporate buttermilk, heavy cream, vanilla, vinegar, cocoa powder, and red food coloring until fully combined.
  4. Pour filling over the crust and place the springform pan inside the roasting pan filled halfway with hot water. Bake for about 85 minutes or until set but slightly jiggly in the center.
  5. Cool gradually in the oven with the door ajar for about an hour before refrigerating for at least four hours.
  6. For frosting, beat together softened cream cheese and butter; gradually add powdered sugar and vanilla until smooth. Spread over cooled cheesecake.
