  • ¼ cup warm milk (105-115° F, whole milk recommended)
  • 2 tablespoons granulated sugar
  • 1 tablespoon instant yeast
  • 1 ½ teaspoons salt
  • 1 large egg
  • 2 cups all-purpose flour
  • 1 ½ cups white whole wheat flour
  • 2 tablespoons unsalted butter (room temperature)
  • 1 egg (for wash)
  • 1 tablespoon milk (for wash)

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. In a stand mixer bowl, combine warm water, warm milk, sugar, and yeast. Let sit for about 5 minutes until foamy.
  3. Add salt, egg, and flours to the mixture. Use the paddle attachment on low speed to mix well.
  4. Gradually add butter pieces while mixing.
  5. Switch to the dough hook and knead on low speed for about 8-12 minutes until smooth.
  6. Transfer dough to a floured surface; shape into a ball and divide into 8 pieces.
  7. Form each piece into a ball and place on the prepared baking sheet.
  8. Cover loosely with a towel and let rest for up to 30 minutes.
  9. For the egg wash, beat together one egg and one tablespoon of milk; brush over each bun.
  10. Bake for 13–15 minutes until golden brown.
