  • 2 lb ground beef (85/15 or 80/20 meat to fat ratio)
  • 1/4 medium yellow onion (finely diced)
  • 1 jalapeno pepper (minced)
  • 2 garlic cloves (pressed)
  • 2 Tbsp minced cilantro
  • 1 tsp cumin
  • 1/21 tsp chipotle chili powder
  • Salt
  • 8 small flour tortillas
  • 2 cups shredded Mexican cheese mix
  • Toppings: corn, sliced jalapeno, diced tomato, avocado
  • Chipotle mayo ingredients: mayonnaise, chipotle chili powder, lime juice, sugar, paprika, salt

Instructions

  1. In a mixing bowl, combine ground beef with diced onion, minced jalapeno pepper, pressed garlic cloves, cilantro, cumin, chipotle chili powder, and salt. Mix until well combined.
  2. Shape the mixture into four equal patties with slight indentations in the centers.
  3. Heat a cast iron skillet over medium-high heat and cook the patties for about 5-7 minutes on each side until desired doneness is reached. Set aside.
  4. In the same skillet, place one tortilla down and sprinkle half of the shredded cheese on top. Add a patty followed by corn, sliced jalapeno peppers, diced tomato, and avocado slices before topping with another tortilla.
  5. Flip carefully and cook until both sides are golden brown and crispy. Remove from heat and let cool slightly before slicing into wedges.
  6. To make the chipotle mayo, mix mayonnaise with chipotle chili powder, lime juice, sugar, paprika, and salt until smooth.
