  • 1/3 cup vegetable oil
  • 1/2 cup brown sugar (packed)
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/4 cup sour cream
  • 1 cup pure pumpkin (pumpkin puree)
  • 1/2 cup powdered sugar
  • 12 tablespoons cream or milk

Instructions

  1. Preheat your oven to 375°F and line a muffin pan with papers.
  2. For the streusel topping: Mix flour, brown sugar, granulated sugar, and cinnamon in a bowl. Stir in melted butter until crumbly.
  3. In another bowl, whisk together all-purpose flour, cinnamon, pumpkin pie spice, baking powder, baking soda, and salt.
  4. In a large bowl, combine vegetable oil, brown sugar, granulated sugar; add eggs, vanilla extract, sour cream, and pure pumpkin. Mix until smooth.
  5. Gradually add dry ingredients to wet mixture; stir gently until just combined.
  6. Fill muffin cups two-thirds full and sprinkle streusel topping over each.
  7. Bake for 25 minutes or until golden brown and a toothpick comes out clean.
  8. While cooling slightly, whisk powdered sugar with cream or milk for glaze and drizzle over muffins before serving.
