  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 2 egg yolks, at room temperature
  • 2 tsp vanilla extract
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 24 tsp whole milk

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter and brown sugar until fluffy. Incorporate pumpkin puree, egg yolks, and vanilla extract.
  3. In another bowl, whisk together flour, pumpkin pie spice, baking powder, baking soda, and salt. Gradually mix dry ingredients into the wet mixture until fully combined.
  4. Drop dough onto the prepared baking sheet, leaving space between each cookie.
  5. For the streusel topping, combine additional brown sugar with softened butter and flour until crumbly; sprinkle over each dough ball.
