  • 2 cups Self-Rising Flour
  • 1 cup Dairy-Free Yogurt
  • 1 cup Red Lentils (dry, rinsed)
  • 1 1/3 cups Vegetable Stock
  • 1/3 cup Mild-Flavor Olive Oil
  • 1 teaspoon Onion Powder
  • 1 teaspoon Italian Herbs
  • 1 1/2 cups Spinach (finely chopped)
  • 1/2 cup Sundried Tomatoes (not stored in oil)
  • 3/4 cup Sunflower Seeds
  • 1/3 cup Nutritional Yeast

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a saucepan, combine rinsed lentils and vegetable stock. Bring to a boil, reduce heat, cover, and cook for about 10–12 minutes until soft. Let steam for an additional 10 minutes.
  3. In a large mixing bowl, combine self-rising flour, onion powder, Italian herbs, dairy-free yogurt, olive oil, cooked lentils, spinach, sundried tomatoes, sunflower seeds, and nutritional yeast. Mix until a sticky dough forms.
  4. Divide the dough into eight portions and place them on the prepared baking sheet.
  5. Bake for 20–25 minutes until golden brown. Allow to cool before serving.
