  • ⅓ cup graham cracker crumbs
  • ¼ cup chopped pecans
  • ½ cup butter (melted)
  • 8 ounces cream cheese (softened)
  • 1 cup powdered sugar (divided)
  • 2 teaspoons pure vanilla extract
  • 2 cups heavy cream + 2 tablespoons
  • 5 ounces chocolate "cook & serve" pudding powder mix (unprepared)
  • 2 ounces semi-sweet bakers chocolate
  • 16 ounces Cool Whip
  • 1 cup chocolate curls or shreds

Instructions

  1. In a food processor, blend shortbread cookies, graham cracker crumbs, and pecans until fine.
  2. Combine the crumb mixture with melted butter in a bowl until evenly mixed.
  3. Press the crust mixture into a greased 9-inch pie dish. Freeze to set.
  4. Beat softened cream cheese, ½ cup powdered sugar, heavy cream, and vanilla until smooth; spread over chilled crust.
  5. In a skillet, heat heavy cream with pudding mix and bakers chocolate until thickened; pour over the cream cheese layer.
  6. Chill the pie for at least 30 minutes until set.
  7. Fold remaining powdered sugar into Cool Whip and spread on top; garnish with chocolate curls and refrigerate for another hour before serving.
