  • 8 ounces sharp cheddar cheese, freshly shredded
  • ¼ cup diced pimento peppers, drained
  • 4 tablespoons cream cheese, room temperature
  • ¼ cup mayonnaise
  • ½ tablespoon fresh lemon juice
  • ½ tablespoon fresh chives, finely chopped
  • 8 slices thick Texas toast or rustic bread
  • 3 tablespoons unsalted butter, softened
  • ¾ teaspoon Italian herb seasoning

Instructions

  1. In a medium bowl, mix shredded cheddar, diced pimentos, cream cheese, mayonnaise, lemon juice, chives, salt, and pepper until creamy.
  2. Refrigerate the mixture for at least one hour to allow flavors to meld.
  3. Combine softened butter with Italian seasoning and salt in a small bowl.
  4. Spread the herb butter on one side of each slice of bread. On the unbuttered side of four slices, spread about ⅓ cup of the pimento cheese mixture and top with remaining bread slices.
  5. Heat a skillet over medium-low heat and cook sandwiches for about 3–4 minutes per side until golden brown and cheese is melted.
  6. Let cool slightly before slicing diagonally and serving warm.
