  • ½ cup brown sugar (packed)
  • ¼ cup salted butter (melted)
  • 1 (20-ounce can) sliced pineapple (drained)
  • 12 maraschino cherries
  • 1 ⅓ cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ cup unsalted butter (softened)
  • ½ cup granulated sugar
  • 1 large egg (room temperature)
  • ¼ cup sour cream
  • ¼ cup milk
  • ¼ cup pineapple juice

Instructions

  1. Preheat oven to 350°F and spray a 9-inch cake pan with non-stick spray.
  2. In a small bowl, mix brown sugar and melted salted butter; spread evenly in the bottom of the prepared pan.
  3. Arrange drained pineapple slices and place maraschino cherries in between them.
  4. In one bowl, whisk together flour, baking powder, and salt.
  5. In another bowl, beat softened unsalted butter with granulated and brown sugars until well combined.
  6. Add egg, sour cream, milk, and reserved pineapple juice; mix until just combined.
  7. Gradually incorporate dry ingredients into the wet mixture without overmixing.
  8. Pour batter over pineapple arrangement and bake for 45–50 minutes or until golden brown and a toothpick comes out clean.
  9. Allow cake to cool for 10–15 minutes before inverting onto a plate.
