  • 2 cups long grain white rice
  • 1 ½ tablespoons olive oil
  • ¾ cup chopped onion
  • 2 cloves garlic (minced)
  • 2 ½ cups water or low sodium chicken broth
  • 8 ounces tomato sauce
  • salt
  • chili powder
  • ground cumin
  • garlic powder
  • dried oregano

Instructions

  1. Rinse the rice under cold water using a fine mesh strainer until the water runs clear. Drain and set aside.
  2. In the Instant Pot, heat olive oil using the Saute function. Add chopped onions and sauté for about 3 minutes until softened. Stir in minced garlic and cook for an additional 30 seconds before turning off the Saute function.
  3. Pour in water (or broth) and scrape any bits from the bottom of the pot.
  4. Add the rinsed rice along with salt, chili powder, ground cumin, garlic powder, dried oregano, and tomato sauce. Stir to combine.
  5. Close the lid securely and set the steam release valve to sealing position. Pressure cook on high for 4 minutes.
  6. Once cooking is complete, allow natural pressure release for 15 minutes before carefully venting any remaining steam.
  7. Fluff the rice gently with a fork before serving warm.
