  • 12 slices day-old Texas toast or 1 loaf of French bread
  • 2 (8-ounce) packages cream cheese
  • 2 cups milk
  • 12 eggs
  • 1 teaspoon vanilla extract
  • ⅓ cup maple syrup
  • 1 cup granulated sugar
  • 2 cups blueberries (fresh or canned)
  • 2 tablespoons cornstarch
  • 1 cup water
  • 1 tablespoon salted butter

Instructions

  1. Cut Texas toast or French bread into 1-inch cubes and place half in a greased baking dish.
  2. Layer half of the cubed cream cheese and blueberries over the bread.
  3. Add remaining bread cubes on top.
  4. In a mixing bowl, whisk together eggs, milk, vanilla extract, maple syrup, sugar, cornstarch, and water until well combined.
  5. Pour custard mixture over layered bread; press down gently to soak.
  6. Cover with plastic wrap and refrigerate overnight.
  7. Preheat oven to 350°F (175°C). Remove wrap, dot with butter, and bake for about 30 minutes until golden brown.
