  • 4 medium-sized yellow onions
  • 2 pounds lean ground beef
  • ½ cup bread crumbs
  • 1 large egg
  • ¼ cup whole milk
  • ⅓ cup barbecue sauce (for brushing)
  • 3 tablespoons barbecue sauce (for the meat mixture)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 8 cheddar cheese cubes (1-inch sized)
  • 16 pieces turkey turkey bacon

Instructions

  1. Preheat oven to 425°F and line a baking sheet with aluminum foil.
  2. Prepare the onions by slicing off the tops and bottoms, peeling the outer skin, halving them, and removing the two outer layers.
  3. In a mixing bowl, combine ground beef, bread crumbs, egg, milk, garlic powder, onion powder, salt, black pepper, and 3 tablespoons of barbecue sauce. Mix well.
  4. Form meatballs by flattening portions of the meat mixture around cheddar cheese cubes.
  5. Assemble by encasing each meatball with onion layers and wrapping with turkey turkey bacon.
  6. Bake for about 30 minutes; brush with remaining barbecue sauce and bake for an additional 10-15 minutes until cooked through.
