  • ¼ cup sour cream
  • 1 teaspoon lemon juice

  • ½ cup sugar
  • 2 large eggs

Instructions

  1. Preheat your oven to 325°F and line a muffin tin with liners.
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press a tablespoon of the mixture into the bottom of each liner.
  3. In another bowl, beat softened cream cheese and sugar until smooth. Add sour cream, lemon juice, vanilla, and mix well. Beat in eggs one at a time until just combined.
  4. Pour the cheesecake filling over each crust until three-quarters full.
  5. Bake for about 25 minutes or until set. Cool completely before refrigerating for at least two hours.
