  • ¼ cup granulated sugar

  • 2 tablespoons pure maple syrup
  • ½ teaspoon maple extract
  • ¼ cup finely chopped pecans (optional)
  • 2 tablespoons unsalted butter (for icing)
  • ⅔ cup powdered sugar (sifted if lumpy)
  • 12 tablespoons pure maple syrup (for icing)
  • 12 tablespoons half and half, cream, or milk (for icing)
  • 2 drops maple extract (for icing)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine quick oats, flour, cinnamon, baking soda, and salt.
  3. In another bowl, cream softened butter with brown sugar and granulated sugar until fluffy.
  4. Add the egg, maple syrup, and maple extract to the butter mixture; mix well.
  5. Gradually add dry ingredients to the wet mixture until just combined; fold in optional pecans.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them evenly.
  7. Bake for about 10 minutes or until golden around the edges; cool on wire racks.
  8. For icing: In a small saucepan over medium heat, melt unsalted butter until golden brown. Remove from heat and whisk in powdered sugar, maple syrup, half-and-half, and maple extract until smooth.
  9. Once cooled, drizzle icing over each cookie generously before serving.
