  • 1 ¼ cups fresh lemon juice (from about 710 lemons)

Instructions

  1. In a small saucepan, combine granulated sugar and 1 cup of cold water over medium-low heat. Stir until the sugar completely dissolves, then set aside to cool.
  2. Juice the lemons to yield 1 ¼ cups of fresh lemon juice, straining out any seeds and pulp if desired.
  3. In a pitcher, mix the cooled simple syrup with the fresh lemon juice and remaining 4 cups of cold water. Stir well.
  4. Taste and adjust sweetness or tartness by adding more lemon juice or cold water as needed.
  5. Chill in the refrigerator for a few hours before serving over ice.
