  • 2 cups all-purpose flour
  • 1 cup melted butter
  • 1/4 cup granulated sugar
  • 16 ounces cream cheese (softened)
  • 1 cup powdered sugar
  • Juice of 1 lemon
  • 2 packages instant lemon pudding mix (3.4 ounces each)
  • 2 cups milk
  • 8 ounces whipped topping
  • Optional: finely chopped pecans

Instructions

  1. Preheat your oven to 350°F.
  2. In a mixing bowl, combine melted butter, flour, granulated sugar, and chopped pecans until well mixed. Press into the bottom of a greased 9×13 inch baking dish and bake for about 20 minutes until golden brown.
  3. Beat softened cream cheese with an electric mixer until smooth. Gradually add powdered sugar and mix until combined; spread over the cooled crust.
  4. Whisk together instant lemon pudding mix and milk in another bowl until thickened (about 2 minutes). Spread this over the cream cheese layer.
  5. Fold in whipped topping with any remaining pudding mixture if desired, then spread over the pudding layer.
  6. Refrigerate for at least one hour before serving. Optionally top with chopped pecans.
