  • 8 ounces linguine pasta
  • 2 tablespoons olive oil
  • 6 tablespoons butter (divided)
  • 4 cloves garlic (minced)
  • 1 teaspoon red pepper flakes
  • 1 ¼ pounds chicken breast (diced)
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 4 cups baby spinach
  • ½ cup parmesan cheese (grated)
  • 2 tablespoons parsley (chopped)
  • 1 tablespoon lemon juice

Instructions

  1. Cook the linguine pasta in boiling water according to package directions. Drain and set aside.
  2. In the same pot, heat olive oil and 2 tablespoons of butter over medium heat. Add minced garlic and red pepper flakes, cooking until fragrant.
  3. Add diced chicken, seasoning with salt and pepper. Cook until the chicken is no longer pink.
  4. Stir in Italian seasoning and add in the spinach until wilted.
  5. Return drained pasta to the pot along with remaining butter, grated parmesan, and chopped parsley. Mix well until the cheese melts.
  6. Squeeze lemon juice over the dish before serving.
