  • 4 medium carrots, peeled and cut into 1/4-inch pieces
  • 4 ribs celery, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 1 bay leaf
  • ¾ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper
  • 8 cups low sodium chicken broth
  • 1 pound boneless, skinless chicken breasts
  • 6 ounces egg noodles
  • Chopped fresh parsley (optional)

Instructions

  1. Press the sauté button on the Instant Pot and heat olive oil. Add onion, carrots, and celery; cook until softened (about 3 minutes). Stir in garlic and cancel the sauté function.
  2. Add oregano, thyme, bay leaf, salt, pepper, and chicken broth to the pot. Nestle the chicken breasts into the broth.
  3. Secure the lid and set the valve to sealing position. Pressure cook on high for 7 minutes.
  4. Allow natural release for 10 minutes before switching to venting.
  5. Remove the bay leaf and shred the chicken with two forks.
  6. Press 'Cancel,' select 'Sauté,' add noodles to the pot, and simmer for about 5 minutes until tender.
  7. Stir shredded chicken back into soup; adjust seasoning if needed and serve hot garnished with parsley.
