  • 2 pounds bone-in chicken thighs
  • 1 small yellow onion (chopped)
  • 3 ribs celery (chopped)
  • 3 medium carrots (chopped)
  • 2 cloves garlic (minced)
  • 3 ½ cups low sodium chicken broth
  • 1 cup frozen peas
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 tablespoons cold unsalted butter (cut into 6 cubes)
  • ¾ cup milk (whole milk is best)
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Instructions

  1. In a mixing bowl, combine flour, baking powder, and salt. Add butter and mix until crumbly. Gradually stir in milk until a soft dough forms.
  2. Set the Instant Pot to sauté mode; heat olive oil and butter. Sauté onion, celery, carrots, and garlic for 3-4 minutes until softened.
  3. Nestle chicken thighs into the vegetable mix and pour in broth with thyme, bay leaves, salt, and pepper.
  4. Seal the lid and cook on high pressure for 8 minutes. Allow natural release for 10 minutes before quick-releasing any remaining pressure.
  5. Remove chicken, shred it with two forks, then thicken broth by stirring in cornstarch mixed with water.
  6. Drop spoonfuls of dumpling dough into the soup base; close the lid again and cook on high pressure for an additional 5 minutes.
  7. Quick release pressure again and stir in frozen peas along with shredded chicken before serving warm.
