  • 2 pounds boneless beef chuck roast (or beef stew meat)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 yellow onion (chopped)
  • 3 cloves garlic (minced)
  • 3 cups unsalted beef stock
  • 2 tablespoons tomato paste
  • 1 tablespoon soy sauce
  • 4 carrots (cut into 1-inch pieces)
  • 1 ½ pounds Yukon gold potatoes (cut into 1 ½-inch pieces)
  • Cornstarch (for thickening)

Instructions

  1. Cut beef into cubes if using chuck roast.
  2. Heat olive oil in the Instant Pot on sauté mode. Brown half of the beef with salt and pepper for about 4 minutes on each side, then transfer to a bowl.
  3. Repeat browning with the remaining beef.
  4. Sauté onions until softened, then add garlic for another minute.
  5. Deglaze pot with beef stock and scrape up browned bits.
  6. Stir in tomato paste and soy sauce, then return beef to pot along with carrots and potatoes on top.
  7. Close lid, set to high pressure for 35 minutes, and let naturally release for 10 minutes before quick-releasing any steam.
  8. Remove bay leaf and thicken stew with cornstarch mixed with water if desired.
